These grapes come from both Tierra Sandy Loam and Salinas Clay Loam – low to moderate vigor soils that produce vines with balanced canopy and fruit growth. Capable of producing very high-quality wines that can be enjoyed young. Hand picked at night then meticulously sorted. Whole cluster pressed, we take the juice directly to barrel without settling the juice which can add weight and complexity to the wine. We do not add any yeast, allowing this wine to ferment using the native yeast on the grapes. We stir the lees by hand twice weekly during fermentation and twice a month during the extended malolactic fermentation. We age the wine on the lees in French oak barriques for 8 months then rack to tank for an additional 3 months before bottling.
