Produced in a lightly oxidative style, the wine features notes of honey, apples, citrus zest and white flowers on the nose. On the palate, the wine is fresh, zippy, and bright with layers of pear and biscuit notes and a slick of minerality on the finish that serves as a reminder of the calcareous soils found in our estate that are not too dissimilar to the limestone and chalk soils found in Champagne.
Sourced 100% from our estate in the Edna Valley, the grapes for our sparkling wine were picked earlier than other blocks. The especially cool and maritime-influenced climate of our Estate Vineyard makes it a well-suited site for producing sparkling wine. Our aim was to make a truly great sparkling wine that is inspired by Champagne, yet also reflects the terroir of our estate.
