winemaking update
As the last bins of fruit rolled through our doors, we’ve officially brought the 2025 harvest to a close. While the vineyards now rest, our work continues in the cellar as we monitor fermentations, press off tanks, and guide young wines into barrel where they will age until it’s time to bottle. This quieter season is a time of reflection – we taste, take notes, and witness the vintage’s character as it begins to emerge. Every vintage brings its own challenges and surprises, and together they create wines that are unique yet unmistakably true to this place. With the 2025 vintage now behind us, we can rest easily knowing that mother nature provided a truly spectacular vintage.
We’re excited to share three estate grown releases, each expressive and perfectly suited to the season of gathering. The 2023 Morrito Pinot Noir marks the 20th anniversary of this iconic bottling. Planted on the southwest-facing slope of Morrito Hill, with its distinctive Chamise Shaly Loam soils, the vines yield fruit of exceptional concentration and minerality. Silky, age-worthy, and nuanced, the 2023 vintage is a fitting milestone for our most limited and sought-after Pinot Noir.
Our Estate Sparkling Wine returns just in time for the holidays. Crafted from 60% Chardonnay and 40% Pinot Noir, it was picked early for freshness, whole-cluster pressed, aged sur lie for 11 months, then spent two years en tirage. Disgorged in May with a minimal dosage, it shines in a bright, extra brut style. Refined and celebratory, it is accompanied this year by a Chamisal-branded Champagne bouchon to preserve every bubble.
Completing the release is our 2023 San Luis Obispo Coast Estate Syrah, a generous, robust wine with dark fruit, spice, and supple texture. Built for hearty meals and shared celebrations, it is a wine to linger over. We are grateful to share another year with you and invite you to visit us at the estate, bring family and friends, or join us for our final celebration of 2025. Our annual Noon Year’s Eve event on December 31st is the perfect way to toast the season and welcome the year ahead together.
