Crafted in the traditional Méthode Champenoise, this sparkling wine offers a refined balance of elegance and coastal freshness. Aromas of honey, crisp apple, citrus zest, and delicate white flowers lead into a lively palate layered with pear, biscuit, and a streak of minerality that echoes the calcareous soils of our estate—reminiscent of Champagne’s famed limestone and chalk.

Sourced 100% from our estate in San Luis Obispo, the grapes for our sparkling wine were picked earlier than other blocks. The especially cool and maritime-influenced climate of our Estate Vineyard makes it a well-suited site for producing sparkling wine. Our aim was to make a truly great sparkling wine that is inspired by Champagne yet also reflects the terroir of our estate.
